Spanish Rice
This recipe is from our friends at Tamales Especiales
2 T olive oil
1 cup basmati rice
3 T minced fresh onion
1 clove garlic, minced
½ carrot, small dice
1/3 of a stick of celery, small dice
¼ of a small can of tomato paste
1 tsp. sea salt
¼ cup frozen garden peas
2 cups water
In a small pan, heat the oil and add the onion, celery, carrot and garlic. Sauté for a few minutes. Add the rice and stir until glossy. Add all remaining ingredients and bring contents to a boil. Reduce heat to simmer, cover and cook until done, about 20 to 25 minutes. Remove from heat and allow to sit for 5 minutes.
