Seitan "Chick'n" Salad
-
1 cup finely diced seitan (we use setian from Cathe’s slow cooker recipe)

2 ribs celery, finely diced
-
1 carrot, peeled and diced
-
1 T chopped red onion
-
2 tsp. dried parsley
-
1 tsp. prepared mustard
-
1 tsp. poultry seasoning (use 1 ½ tsp. if you are not using seitan from slow cooker recipe)
-
½ cup vegan mayonnaise, more or less to taste
-
Salt and pepper to taste
Put the diced seitan, celery, carrots and onions in a bowl. Add remaining ingredients and stir well to combine.
This salad make a great sandwich, but is equally good served on a pile of greens.
