Red Beans & Rice

This meal comes together quickly but tastes like it cooked for hours.  Perfect for family meals or dining solo, since leftovers are great later in the week or can be frozen. 

 

  • 1 T olive oil (or use water)

  • 1/2 onion, diced

  • 1 green pepper, diced

  • 1 to 2 tsp. minced garlic, preferably roasted

  • 2 cans red beans, drained but not rinsed

  • 8 oz. can tomato sauce

  • 1 cup water

  • 1 handful chopped fresh parsley (plus additional for garnish)

  • 1 tsp. Annie's Worcestershire Sauce

  • 2 to 4 links Field Roast Grain Sausage, Smoked Apple Sage flavor

  • (or the vegan sausage of your choice), casings removed and cut

  • into bite size pieces

  • hot suace (optional)

  • Cooked Rice

In a large saucepan, saute the onion in the olive oil over medium heat for a few minutes.  Add the green pepper and continure to saute for another few minutes, then add the garlic.  Add all the reamining ingredients (except cooked rice) and bring to a boil.  Lower the heat, cover and simmer about 25 minutes.  Uncover and cook an adidtional 3 to 5 minutes to desired thickness. 

 

Serve over cooked white or brown rice or polenta.  Salt and pepper to taste.  Garnish with chopped fresh parsley and pass the hot sauce!
