Parsley & Tomato Vinaigrette

This delicious vinaigrette is from Chef Deb Rodgers.  She uses it on top of her famous Brazilian Black Beans.  In addition to beans you can use it on top of  greens, veggies, grains or in sandwiches.  It is easy to make and so versatile. 

 

  • I bunch Italian parsley finely chopped

  • I bunch scallions (green onions) thinly sliced

  • 2 to 3 tomatoes small dice

  • Fresh ground pepper

  • Salt to taste

 

Mix the above ingredients together and then add

 

  • 1/3 cup red wine vinegar  and

  • 1/3 cup to 1/2 cup olive oil
