Lettuce Wraps
Pre-roll these lettuce wraps and secure them with a toothpick inserted through the center. Or, for a nice presentation "tie" the wrap together with a slice of scallion. You can also serve the 'pate' with celery or on top of cucumbers or other veggie slices.
1 cup unsalted pecans
2 stalks celery
2 to 3 carrots, peeled
1 T agave (more to taste)
2 T tamari
1 ½ T sesame seeds
1 tsp. fresh ginger
Wash the lettuce leaves, if using and allow to dry.
Meanwhile, put all the remaining ingredients in a food processor and pulse several times untill the nuts are finely chopped.
Spoon the mixture into lettuce leaves and enjoy with optional garnishes like bean sprouts, sliced scallions and chile oil or hot sauce on the side.
