Kale Salad

If you’re a fan of kale try this simple salad.

 

  • 6 cups kale, stems removed and coarsely chopped

  • ½ cup walnuts, chopped (or your favorite nut)

  • 2 to 3 T extra virgin olive oil

  • zest and juice of 1 lemon

  • sea salt and fresh pepper

 

In a small bowl combine the olive oil and lemon zest and juice. Pour  over the kale and toss. 

Add the nuts, salt and pepper to taste and toss again.   Add additional lemon juice to taste.
