

Holiday Gift Cakes
We've been the lucky recipient of these gift cakes, as have so many others, for years. The recipe is from Mark W. Reinhardt. Don't wait for a holiday to make these delicious cakes!
Ingredients for Two cakes:
4 C White Flour
2 C Whole Wheat Flour
2 t Baking Soda
½ t salt
3 T “Egg Replacer” Phony Chickens’ Eggs
3 T Ground Cinnamon
1 t Ground Nutmeg
2 1/2 C Vegetable Oil
2 C Unsweetened Applesauce
4 C Sugar
2 T Vanilla Extract
3 C (or 1-1/2 lb., or 6 small, or 3 large) Tart Apples, peeled, cored, and sliced
2 C (or more!) Walnut or Pecan pieces
Build your cake this way:

Mix together the oil, sugar, applesauce, apples and nuts in a large bowl.

Combine the flour, spices, fake eggs and baking soda, and then mix in with the rest.

If you use a lot of whole wheat flour you may have to add a small amount of water. The batter should have the consistency of ready-mix concrete (even though it, hopefully, won’t taste like it).

Pour everything into a greased and floured large (9"x5") baking pan.

Bake for 2 hours at 350ºF
