Half Cooked Salad with Cumin Roasted Garbanzo Beans
This full-meal salad is from Dreamy Leaf.

1 cup baby spinach

1 avocado, sliced

1 bunch asparagus, cut into 2" pieces

1 carrot, chopped or spiraled

1 red bell pepper, sliced

½ red onion, sliced

1 can garbanzo beans, washed and drained

2 tbsp olive oil
-
1 garlic, minced
-
1tsp black pepper
-
1 tsp cumin
-
1 tsp red chili pepper
-
½ lemon zest and juice

Salt, as needed
Put olive oil in an iron cast pan over medium high heat.
Add garbanzo beans, cumin, and black pepper. Cook for 3 minutes.
Add the salt, garlic, and the lemon juice and zest. Cook for 3 more minutes.
Add the vegetables except the spinach and avocado, and cook for 5- 15 minutes, depending on your preference.
Turn the heat off. Add the avocado and spinach before serving.
