Gift's Broccoli Soup

This soup is good anytime of the year. 

The recipe is from Gift at the Jao Camp in Botswana, Africa. 

Even people who don’t like broccoli will like Gift’s soup.  

 

Top each bowl with a sprinkling of wild rice or sesame seed sticks.  

 

  • 2 T Earth Balance or other vegan butter

  • 1 onion, chopped

  • 4 cups water

  • 1 bunch broccoli, chopped with the stem

  • 1 large potato, peeled and cubed

  • 2 cubes of Rapunzel Vegetable Bouilion (or other veggie bouillon cubes)

 

Melt the Earth Balance in a dutch oven and fry the onion until it is soft and transparent.  Add the water and potatoes.  Bring to a boil, then add the broccoli.  Reduce the heat, cover and simmer until the potatoes and broccoli are tender.  Transfer the soup to a food processor and puree for several minutes until the mixture it very creamy.
