I’m fortunate to live in the “Mile High City.” Actually, I live in the foothills surrounding Denver. Being close to a large city I have available to me a wide variety of grocery stores and restaurants that support plant-based diets. Besides Whole Foods and Sprouts, among others, Denver now has an all vegan grocery store, “Nooch Market."  If you do not live where the ingredients used herein are readily available, ask your local store to carry them or order products online.

 

Happily, Denver also has a several good vegan eateries including  Watercourse, Native Foods and Beet Box.  Hopefully, we'll soon have many more!   There are also several vegetarian eateries with some amazing vegan food including City O' City and Govinda's.  Nearby Boulder offers vegan and vegetarian dining options including Native Foods, Julia's and Leaf Vegetarian.  Additionally, Nepal Cuisine in Boulder offers a vegan lunch buffet on Mondays and Jill's Restaurant  in the St. Julian offers one on Fridays. 

I am also fortunate to live in a state with several wonderful organizations for people interested in plant-based diets. If you live in Colorado or are in a state that does not have a vegetarian or vegan group, check out Vegan Life Colorado (formerly known as The Vegetarian Society of Colorado  veganlifecolorado.org).  It’s an amazing organization, thanks to the dedication of Ann & Peter Swissdorf. Membership allows you to ask questions, get advice, share recipes and connects you with other individuals interested in plant-based diets.

 

Finally, I’m lucky to live fairly close to several wonderful vegetarian/vegan restaurants. If you don’t live near such a restaurant, don’t worry. Eating out and eating a compassionate diet has never been easier. Check local restaurants featuring Thai, Chinese and Indian food as these generally offer a good selection of animal-free food. Additionally, most restaurants now offer veggie sandwiches and burgers and many more are beginning to carry plant alternatives to dairy cheese.
