Burrito Pie

We've seen many variations of this dish, probably because it’s about as easy, quick and tasty as it gets. You can use either refried black beans or refried pintos, just make sure there is no lard in the beans. We like Amy’s brand.

 

  • 1 can vegetarian refried beans 

  • 1 cup Bisquick or other vegan baking mix.  

  • ¼ cup water

  • 1 cup prepared salsa (red or green)

  • 1 cup shredded vegan cheddar (like Daiya)

 

Mix the beans, Bisquick and water together in a bowl. Transfer the mixture to a pie pan that has been lightly coated with cooking spray. Spoon the prepared salsa over the mixture, then sprinkle the Daiya over that and top with ¼ to ½ cup of any or all of the following on top: 

 

  • chopped black olives 

  • diced onions

  • diced green peppers

  • chopped tomatoes.

 

Bake uncovered in a 350 degree oven for about 30 minutes. Serve with avocado slices and additional salsa.
